It has been a busy month. Kam and Lisa moved from Miss. Kipp came out to help Kam move. I drove his car and we had a very adventerous trip. With breaking down to the tower of wonder. I had a great visit with Kory and Tiff and Hailey. It was so good to be able to see her. I hope to get out more often. Rich had a great time with his motorcyle ride with his brothers to the grand canyon. Then we had a great time at peach days in Hurricane with parade and navaho tacos. We got back then went to Nashville for the NAGUS convention. It was great. With lots of food and trinkets and the Grand Ole Oprey. Rich is now in DC. I have enjoyed my quite time at home. Road Trip
Well tomorrow we are going to Mississippi. Rich will be there for 1 day then drive back to Tenn. I will stay and help Kam get ready to move. Kipp is going to come and help us drive to Utah. Yeah! A road trip with my 2 sons. That should be very interesting and long. It is around 30 hours to drive. Then I will stay with Kory and get to see little Hailey. Rich will come out around the 30th visit, then get together with his brothers to go on a Wild Hogs ride, on motorcyles. I can't wait to hear about that adventure. Then we will go to Hurricane's Peach Days and leave on Sunday the 6th. So by then I will be glad to get home. We have been having fun in Tenn. Riding our bikes and walking my dog. We went to a Smokies ballgame last night and it was a perfect night to sit and relax. We decided that baseball is such a slow game but it is relaxing. Here are a few pictures.

Apple Pie Tarlets
1 sheet refrigerated pie pastry
1 tablespoon Domino® or C&H® Granulated Pure Cane Sugar
Dash ground cinnamon
FILLING:
2 teaspoons butter
2 cups diced peeled tart apples
3 tablespoons Domino® or C&H® Granulated Pure Cane Sugar
3 tablespoons fat-free caramel ice cream topping
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon lemon juice
1/8 teaspoon salt
Roll out pastry on a lightly floured surface; cut into twenty 2-1/2-in. circles. Press onto the bottom and up the sides of miniature muffin cups coated with cooking spray. Prick pastry with a fork. Spray lightly with cooking spray. Combine sugar and cinnamon; sprinkle over pastry. Bake at 350° for 6-8 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks. In a large saucepan, melt butter. Add apples; cook and stir over medium heat for 4-5 minutes or until crisp-tender. Stir in the sugar, caramel topping, flour, cinnamon, lemon juice and salt. Bring to a boil; cook and stir for 2 minutes or until sauce is thickened and apples are tender. Cool for 5 minutes. Spoon into tart shells. Yield: 10 servings.

Oatmeal and Chocolate Chip Rice Krispies
Here is a receipe I would like to share. It is sooo good and easy.
Try them you will like them
3 Tbs. Butter or Margarine
3 Tbs. Honey
4 cups small marshmellows or I like to add the whole pkg.
2 1/2 cups oatmeal
3 cups rice krispies cereal
1/2 cup mini chocolate chips
Melt butter in sauce pan add honey and stir until smooth. Add marshmellows and stir until melted. Combine rice krispies and oatmeal in a large pan. Pour marshmellow mixture over cereal. Stir until all is mixed. Let cool just a little (so the chocolate chips dont' melt)then add the mini chocolate chips. Mix. Then pour into a 9 x 13 pan. Cool then cut into squares.

Tomato Cucumber Salad
4 roma or vine ripe tomatoes
1 medium cucumber
2 tbsp balsamic vinegar
1 tsp extra-virgin olive oil
1/4 tsp sugar
2 tsp chopped fresh basil
Freshly ground black pepper to taste
Preparation:Slice tomatoes and cucumber thinly and place in a medium bowl. Combine vinegar, oil and sugar. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with chopped basil. Refrigerate or serve at room temperature.
